We design sandwiches from structural principles. Placing fresh basil directly beneath the hot sourdough crust traps the fragrant oils in the bread crumb, while placing the salted tomatoes atop the mozzarella ensures the moisture does not saturate the base.

LOOSE, AERATED FOLDED MEATS

Meats compressed tightly block flavor profiles. Folding them in loose air pockets allows fats to melt effortlessly at mouth temperature.

LOCALIZED OLIVE OIL DIMPLING

Sourdough ciabatta needs local oil pools. Our baker punches dimples into the dough so the EVOO stays suspended.
