We design sandwiches from structural principles. Placing fresh basil directly beneath the hot sourdough crust traps the fragrant oils in the bread crumb, while placing the salted tomatoes atop the mozzarella ensures the moisture does not saturate the base.

Meats compressed tightly block flavor profiles. Folding them in loose air pockets allows fats to melt effortlessly at mouth temperature.
